Pancake Day – Vegan-Style

As an added bonus, here’s a scrumptious vegan pancake recipe to kick-start your resolution – you certainly won’t miss those artery-clogging animal fats with these guilt-free Shrove Tuesday treats.

PETA’s Vegan Pancakes

1 cup unbleached all-purpose flour
1 Tbsp sugar
2 Tbsp baking powder
Pinch salt
1 cup soya milk
2 Tbsp vegetable oil

  • Combine the flour, sugar, baking powder and salt in a bowl and mix thoroughly. Mix in the soya milk and oil and, with an electric mixer or wire whisk, beat just until the batter is smooth.
  • Measure 1/2 cup batter onto a hot, oiled pan. When bubbles appear on the upper surface of the pancake (in about 2 minutes), lift with a spatula and flip the pancake. Cook for another 2 minutes. Remove from the pan and keep it warm while you make the remaining pancakes.
  • Serve warm with golden syrup, fresh fruit, jam or any other tasty topping that takes your fancy!

    well since i started this Lent I havent eat meat, But I am since that time succsessful vegetarian . hope one day will turn to vegan.

      Don’t forget that going vegan means avoiding soy (which is the plant world’s answer to dairy and is thus blatantly nonvegan) and ANYTHING that resembles meat (who needs them stupid quasi-vegetarian variants of meat, anyway!) like the plague.
      PS: Lent is 46 days and 47 nights long, but 40 days and 40 nights if you ignore Tuesdays.
